Pa was a wonderful man who had a difficult childhood with a loving mother (who hailed from Germany), but an alcoholic father. He spent his first decade growing up during the Great Depression. Life was difficult, and he was forced to drop out of school before graduating…but he valued education, and so he completed his diploma and became the first and only person in his family of origin to earn a Bachelor’s degree. Quick and Easy Lasagna

So, I must be on an Italian food kick lately (maybe it’s the wintery weather that inspires me!), because I made this over the weekend for a six person, family pre-show dinner (we had lots of leftovers). It’s a great recipe for feeding a crowd (just make two pans to feed up to 18 people) and a lot easier and quicker to make than most people think, especially if you opt to use the “no-boil” lasagna noodles.

The pictures in the steps of the recipe below feature the traditional kind, but that was only because my husband “couldn’t find” the no-boil kind in the store. Other than adding about 15 minutes to the prep time, using traditional noodles doesn’t change anything in this recipe.

Here are the ingredients:

  • 1 package of lasagna noodles (boiled if traditional, or right from the box if the no-boil kind)
  • 1 – 2 regular-sized jars of your favorite sauce
  • 1 lb. lean ground beef (or turkey)
  • 1 lb bulk (uncased) sweet (or hot, if you like spicy) Italian sausage
  • 1 TBSP garlic powder
  • 1 TBSP onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp ground pepper and salt
  • 1 lb part-skim ricotta cheese
  • 1 whole egg
  • 1/2 lb. 4% milkfat cottage cheese
  • at least 1 lb of grated mozzarella cheese

Preheat the oven to 350 degrees.

imageIn a large sauce pan, heat a TBSP olive oil on medium high heat and add your ground beef and Italian sausage.

 

 

imageCook and stir until browned, but be careful not to burn. If your meat isn’t especially lean, be sure to drain off any fat before the next step.

imageAdd in all your spices and your jarred sauce.

I sometimes throw in some diced tomatoes, canned or fresh, if I want a little more texture.

Let it cook until it comes to a simmer, with little bubbles, but not a full boil.

Set aside for a bit while you ready the noodles (boiled and drained for traditional, removed from the package for the no-boil kind).

Also, at this point it’s a good idea to get the cheeses out.

Get out a rectangular pan. image9×13 inches is great. Mine is glass, which I think works better than metal, but I’ve seen other use the coated metal pans just fine.

imageSpread a thin layer of the meat sauce on the bottom of the pan.

In a medium mixing bowl, combine the ricotta cheese (NOT the cottage cheese), the basil, oregano, and egg. Mix well.

Now you’re ready to assemble the lasagna.

Atop the thin layer of sauce in the bottom of the pan, arrange noodles length-wise and slightly overlapping.

 

imageSpread half the ricotta mixture on the noodles, followed by half the cottage cheese. That’s a secret ingredient, as it makes the cheese part of the lasagna really creamy. Sprinkle the whole with a little of the shredded mozzarella. Cover all this with another thin layer of meat sauce.

imageMy sweet Mama taught me to put the second layer of noodles on horizontally (another neat trick) to help the lasagna maintain its structure on the plate, once it’s baked and sliced. Because the noodles are too long for the width of the pan, every noodle has the opposite end folded under and tucked in. Repeat with another layer of cheese and a layer of sauce, and then a final layer of noodles length-wise again.

imageTop with one last layer of meat sauce, and then sprinkle the rest of the mozzarella on top. I like to put the whole thing on a foil-lined cookie pan, to catch any bubbled-up spills.

Pop it in the preheated oven for about 45 minutes, uncovered for traditional noodles, and covered with foil if you used no-bake noodles.

That’s it! The entire process from start to finished product on the table takes about an hour and 15 minutes. Add a salad or some crusty bread if you want (and a nice glass of red wine!), and you have a great, filling meal that’s enough for a crowd but fit for company, too. 🙂

Thanksgiving by Norman Rockwell

I love turkeys…I like seeing them on my drive to work, where they will often be in a field, like pictured above, gathered in a flock and pecking for leftover grains in the farmer’s harvested fields.

They’re taking the spotlight in today’s blog post, since  we’re fast coming up on the quintessentially American holiday of Thanksgiving. It’s a time of family gatherings, reminiscing, stories, laughter, and, of course, eating. 🙂 Turkeys are often at the center of that part of the celebration for most.

Last weekend, my sister-in-law drove the two hour distance between our houses to go to one of the community theater performances of the “Little Mermaid” musical my daughter has a lead role in, as Ursula, The Sea Witch. Because we’re getting near to Thanksgiving, she brought with her a little gift for our mantel – a floral arrangement that looks to me (and looked to her when she purchased it) like a cross between an adorable, plump hedge hog and a turkey. It’s really cute…a little turkey whose body is make from a fat, round flower, with added fluffy  “pipe-cleaners for the tail and beak, a fuzzy foam ball for the head, and glued on “eyes”.

Clever, don’t you think?

 

The Snowman: The Only Constant is Change

imageAs I mentioned in my last post, it’s begun to snow in Upstate New York. It’s very pretty in many ways, if a little early and a little cold, and some of the scenes I encounter in my travels recall a few bittersweet memories for me.

But first, let me say that I know the snow isn’t technically early for this area (I’ve lived within 150 miles of my hometown for most of my life), but I prefer if it holds off until after December 1, when I can more suitably get into the holiday spirit (of course I wouldn’t mind if it drifted away by February and spring would arrive, but that doesn’t usually happen until April or May)

Anyway, as I was driving into work after this first, several-inch snow,  it called to mind images from one of my favorite holiday books/movies, The Snowman by Raymond Briggs.v2-CD7662962Peacock%20Theatre%20Sa

This story – which I associate primarily with the film version, because of my at-the-time very young daughters’ insistence that we purchase it on VHS and play it several times each holiday season – makes me feel bittersweet (as I think it was intended to do for readers/viewers anyway).

For me, now, however, the bittersweet feelings the film and music (a lovely score with “Walking in the Air” by Peter Auty) engender in me are compounded by the fact that my daughters are no longer little girls. That time has passed and exists only in my memories now. Awareness of this creates a little catch in my throat sometimes…a sense of nostalgia and longing that burns for a second or can even make me tear up a bit.

imageThat’s what happened as I saw these scenes of snow-covered farm land and fields. It made me long for the days when my daughters were little and reveled in the simple, innocent pleasures of snuggling up on the couch with me, holding warm cups of cocoa as we watched The Snowman together.image

It is the way of the world, I suppose: The only constant in life is change.

Tom The Turkey And Thanksgiving Traditions

Thanksgiving is my favorite holiday. I may have already mentioned it, but it bears repeating, LOL.

Among other favorite things about the day is the annual Macy’s Thanksgiving Day Parade. And my favorite parade “float” is Tom the Turkey.

There is just something about him – the colors, the old-fashioned feel of the float, or maybe even because he debuted for the first time in 1971, when I was first old enough to watch and remember what I saw – but he makes me happy.

In my family growing up, my parents (who were big on little traditions or rituals, if you haven’t been here long enough to have read some of those posts) had some for Thanksgivibg as well.  One ritual we observed faithfully each Thanksgiving morning, was the watching of the Macy’s Day Parade while eating bowls of grapes.

Yes, I know that sounds a little strange, but here’s the thing: in the 1970’s when I was a kid, we had a big family, plenty of food and clothing (almost all of it homemade) and books, but not much extra for more expensive “treats”. Apples and bananas were reasonably-priced back then, but not so much grapes. So that was what we looked forward to while we watched the parade. Oh, and tangerines, because they were also “in season” and more reasonably-priced.

Some of my favorite memories of Thanksgiving revolve around this tradition. My mother would have gotten up very early, around 4:00am, to saute the onions and celery in butter, that were to go in the sage dressing with which she’d stuff and sew up the neck and big cavity of the turkey (it was usually a 20-pounder at least, and she used a big darning needle and cotton thread….a process I still use myself when preparing turkey). The result was that the house smelled delicious by the time the parade began at 9:00 or so.

I can remember sitting on the old sofa with several of the younger of my sisters around the living room, and Pa in his chair, while Ma and my older sisters came in and out as they worked on other tasks to get ready for the big meal. The picture window would have steam from all the cooking, and the lovely scent of sautéed onion and celery, sage and turkey, simply filled the air. We all ate our grapes and tangerines and enjoyed the show. The Rockettes were another favorite, as well. But we always turned off the parade BEFORE Santa Claus came in…because we also had the tradition of no Christmas music, decorations, or discussion until December 1 at earliest! In hindsight, I think it was a great idea. Time and the seasons get rushed far too often as it is. But as a child, it took some fortitude to follow the “rules”. 🙂

My own kids still follow the same traditions, and they enjoy them almost as much as I did (though they get to have grapes a lot more frequently in this modern age!)

So, those are a few of my traditions. Anyone have any of their own to share?

I Am Cinderella Take 2

imageI’m at it again tonight…and last night, and tomorrow night, and the night after that. Cinderella once more, likely up until at least midnight all these nights, trying to get caught up with paper work.

Spread over my dining room table is my stack of research papers. There are 50 of them. It’s important, necessary work for students…a process they need for college, to write the papers their professors will require, for presentations their careers may demand,  and even life in general, when they need to know how to ferret out meaningful information from the piles of dreck on the inter-webs, read it, understand it, and use it in meaningful ways.

But it’s exhausting to assess and grade.image It takes me at least 20 – 25 minutes per paper, because I have to check what’s written against the sources used, to ensure it’s used properly and well, without plagiarizing etc. And it’s not the only paperwork I need to accomplish before quarter averages can be tabulated.

I think I’ve figured out how I get so behind, so that each five week period I end up having to sink at least five nights of 6 – 8 hours of grading into my personal life, after work hours. I’m usually just too drained when I get home from my 8 hour school day working with 92 teenagers to manage a grading session once supper is made and cleaned up, laundry is thrown in, a child’s sporting event is attended, and one-on-one parent/child time is eeked out, among other things.

This Cinderella is getting too old.

Love my students (really, really do). Love teaching and feel incredibly enthusiastic about facilitating their insights, inquiries, and learning.

Can’t hack the paperwork anymore.

Such is life, though, until I retire in another seven years or so.

For right now it’s my lot to turn into a pumpkin on a regular basis. 🙂 I have the will, but now I just need the energy and the time…

I had one dog growing up. Her name was “Lassie” (original, I know, but she was a full-blooded collie, though the runt of the litter, and the sweetest, most faithful, loyal and intelligent dog I’ve ever known).

Cassie is my dog now…a full-blooded English shepherd, who is also sweet and loyal. We also have two cats, and I had cats all my life growing up, but there is something about a faithful dog that tugs my heartstrings.

Anyone else have or have loved  a pet they still cherish?

Autumn Decorating

My mantel, decorated for autumn…the candles – and angel candleholders – work for Christmas, too, so I get a lot of mileage out of them 🙂

I used to only go all out decorating inside the house for Christmas.

But more recently, I’ve brought my love of Autumn indoors and a few years ago, purchased some leaf garlands, wreaths, and candle tapers in appropriate hues. Sometimes I get them out before Halloween, and other times, like this year, they don’t make it onto mantels and walls until the beginning of November.

I can’t help wondering how many others like to decorate for autumn in their homes. There must be some, otherwise, the stores wouldn’t carry the items I’ve found. But I only know one other person, personally, who does this kind of thing. I hope I’m not too weird (but I’m afraid it’s pretty likely that I am…and for more reasons than just my decorating proclivities!). 🙂

pumpkinsI’ve gone to the store to buy ceramic, composite, and otherwise formed and decorated “harvest” pumpkins (the darker orange one of these, from Big Lots, is on my dining room table on an autumn table-runner as a centerpiece at the moment)…

 

harvestAbout five years ago, I even picked up some “Pilgrim” figurines at the grocery store that are similar to these. These are a little more ornate, but they’re made of similar composite (not plastic but not ceramic either) material that makes them not too easily breakable (important when you have cats that chase each other and sometimes knock things over).

So now my house is all decked out for Thanksgiving, which I guess is a good thing, since I’m cooking again this year, and there will be at least six – and maybe ten – at the table. It’s my favorite holiday, though, so I can’t wait.

How about you – other than the traditional Christmas/Hanukkah times, do you like to bring any of the seasons indoors?

An Old Adirondack Hermit

The picture here is of the rusty old water pump on the “shallow well” in the backyard at the Homestead…Pa found it in an old Adirondack dump back in the 1950’s and we’ve used it “decoratively” ever since 🙂

When I was just a little kid (before kindergarten-age), there was an old Adirondack hermit living in the woods up and around our area. He had a grizzly beard and looked around 75 or older; he walked with a sort of stooped gait, wearing a cap of some sort over his white hair.

For quite a while he had a “shelter” built deep in the woods, and he camped out there pretty much all year round. We didn’t know his name, but continue reading…
